1. Mushroom vegetable soup:
There are many types of Mushroom around us. you know that Mushroom contain good amount of protein and fiber.They also contain vitamin B . Apart from they are rich in antioxidant called Selenium. Antioxidant help to improve immune system and repair damaged cell and tissues.
👉👉Ingredients:
Quantity
ü Olive oil ½ tablespoon
ü Sliced portabella or 1 cup

ü Carrot , diced 2
ü Large onion , diced 1
ü Celery stalks, diced 2
ü Summer squash or
Zucchini,diced 1
ü Garlic cloves, minced 4
ü Fresh basil 1 tablespoon
ü Dried thyme 1 tablespoon
ü Cayenne pepper a pinch
ü Chopped, collards, or
Chard
stems removed a bunch
ü Diced tomatoes 2 cups
ü Vegetable stock 1 bowl
ü Canned white beans 2 cups
ü Salt and ground pepper to taste
ü Broccoli 1 cup
👉👉👉Proccedure:
Ø Firstly, you wash all the
vegetable ingredients .Then chopped them into small pieces.
Ø Now heat olive oil in a large pot
on medium heat. Add mushrooms, onion, carrots celery and zucchini or summer
squash.
Ø Cook for 5-8 minutes stirring
often, when veggies start sticking to the bottom of the pot,pour in 2-3 tbsp
vegetable stock to keep them from sticking. Then you should add basil, thyme
and cayenne, and cook, stirring often
Ø After 2-3 minutes, add kale or chard,
then cook them, stirring often, cook them until the leaves have wilted.
Ø Add tomatoes, vegetable stock, and beans,
again stirring to combine.
Ø Then add 1 cup of water, Bring to
a simmer, reduce heat to medium-low, and continue to simmer for 20-25 minutes,
stirring occasionally.
Ø Add salt to taste
Ø Add pepper just before serving for these soup

2.Chicken
and Broccoli soup
Chicken is a very famous among us as nonveg. Today we going to know that chicken is also rich in protein, calcium and phosphorous. Eating chicken regularly can help you lose weight and keep your muscle healthy.
Broccoli is also very nutritios .It is a great source of protein and fiber. Apart from broccoli contains a good amount of calcium, iron and Vitamins( A,K,D,C, E etc)
👉👉Ingredients:
ü Raw chicken breast,
Cubed( bite size) 2 oz
ü Raw onion, chopped ½
ü Raw carrots, chopped ½
ü Raw broccoli, chopped ¼ bunch
ü Curry powder 1 tablespoon
ü Olive oil 1 tablespoon
ü Salt to
taste
ü Black pepper 1 tablespoon
ü Dried basil 1 tablespoon
ü Bay leaf 1
ü Crushed chili peppers ½ tablespoon
ü Water as
need
ü Vegetable stock powder 2 tablespoon
👉👉👉Procedure:
Ø Firstly, dice raw onion, carrots and broccoli
separately.
Ø Cut up raw chicken breast in bite size
Ø Wash them and keep aside
Ø in a separate bowl mix spices.
Ø Mix vegetable stock powder with
cold water and boil, keep warm until needed.
Ø Now, in a large pain heat olive
oil at medium temperature. Add chopped onion, carrots and fry them for 3-4
minute until softened. Add hot vegetable stock and spices with bay leaf
Ø When boiling , add raw chicken cubes
Ø Keep the temperature low until the
chicken cubes simmering
Ø Add broccoli and again left for 20 minutes to
simmer
Ø Add salt and serve hot
